SHOPPING LIST

  • 1 x sachet Epicure Smoky Chipotle Seasoning Mix

  • 1 x tin Epicure Chopped Tomatoes

  • 1 x tin Epicure Kidney Beans

  • 1 x jar Epicure Minced Garlic (or fresh garlic)

  • 500g Minced Beef

  • 1 x Onion

  • 1 Red pepper

  • Rice to serve with

  • Sour Cream (optional to serve with)

  • Fresh Coriander (optional as garnish)


LET'S COOK...



  1. Dice and gently fry the onion in a splash of oil in a large pan until soft, before adding the red pepper (also diced) and a tsp of the minced garlic (or crushed garlic clove if using fresh).

  2. Sprinkle over the Seasoning Mix, stir well and cook for around 5 minutes.

  3. Add the minced beef in batches, gently frying to brown all over. Add the tinned tomatoes and around 300ml of water, bringing to the boil.

  4. Finally add the tin of kidney beans (drained), stir in well and turn down the heat slightly to gently simmer for 30 minutes, giving it an occasional stir.



Serve with freshly cooked rice and garnish with chopped coriander and a dollop of sour cream.
